Come by from 5 to 7 P.M. on Wednesday, June 8th to sample the fantastic Champagnes of Billecart-Salmon. One of the largest “Grower Champagne” houses, they own all of their own vineyards ensuring the quality of the fruit they make wine from. This is always an enlightening tasting, getting to chat with Clement Calleja. If you can’t make it, feel free to place an order and pick up the wines after.

(made from fruit grown in Cramant, Avize, Chouilly, Mesnil-sur-Oger and Oger; 8 g/l dosage; L402339 15193A): Light yellow-gold. High-pitched citrus and orchard fruit scents are complemented by notes of honeysuckle, lemongrass and chalky minerals. Spicy, focused and mineral-driven, with intense Meyer lemon, tangerine and pear skin flavors given depth by a hint of brioche. A note of smokiness builds on the finish, which hangs on with outstanding floral persistence.

Beautiful aromas of light butter, dough, cooked apples and apple purée. Full-bodied and very rich with plenty of fruit, intense nut, and light toasted oak. Very structured. This is decanted in cuve and then racked into bottles and fermented in old oak barrels for eight to nine months. Battonage and malo blocked.

This shows depth and richness without being heavy. Complex aromas of sliced apple and peach follow through to a full body, with ultra-fine tannins and a long, layered finish. This is so vinous and flavorful. One-third fermented in barrel and no dosage. What a great wine, great Champagne. The winemaker says it looks you straight in the eyes. 80% pinot noir and 20% chardonnay. No. 10 Wine of JS.com in 2014.
