This Saturday we’re tasting two of our custom barrel rums from Papa’s Pilar. One is aged exclusively in sherry butts, while the other is aged in a combination of bourbon barrels, port pipes, and sherry butts. The Merch staff tasted several barrel samples and we selected these two single barrels as our favorites. Taste them both side by side this Saturday!
Papa’s Pilar 24 Year Solera Rum Spanish Sherry Cask Finish

Master blenders created this expression of custom-barreled Papa’sPilar Dark, with seven different rums up to 25 years old, both pot and column distilled. After solera aging in bourbon barrels, port wine casks and Spanish sherry casks, the rum was further aged in French Limousin oak sherry casks from Jerez de la Frontera, Spain, for approximately 30 days. Flavors include vanilla, cinnamon, maple, coffee and almond, with hints of port and sherry, plus layers of slight sweetness, followed by a spicy finish, imparted by the French oak.
Papa’s Pilar 24 Dark Rum Bourbon Cask Finish

This is our first private barrel of rum and we could not be more excited. It’s a gorgeous dark, rich, sweet aged rum with quite an aging history. It goes through solera aging in American oak, then it goes into Angel’s Envy Oak cask, then Port cask, then Sherry cask, then back into Angel’s Envy Oak for 120 more days before bottling. The bottle is a unique homage to old school pirate canteens. The nose is complex and inviting, with notes of vanilla, coffee, honey, and cinnamon, and the palate is intricate and flavorful with earthy, mouth-coating flavors of spice, almond, toffee, and caramel. This is a great sipping rum to enjoy all on its own, or it can be mixed into any number of delicious cocktails.
