We were excited last year to discover the wines of Vigilance Winery! This 100% sustainable winery uses a technique called the Ovis Cycle, where sheep prune and fertilize the vineyard. 2014 Vigilance Proprietary Red Wine “Cimarron,” Red Hills, California

79% Syrah, 8% Grenache, 7% Mourvedre, 6% Petite Verdot. Inky blue with purple highlights in color. Made from fruit grown at elevations ranging from 1,400 to 3,000 feet within the Lake County/Red Hills AVA. The higher elevation resulted in great balance between acidity and tannin and a multi-layered wine with good balance and a long, lush finish. Black cherry and strawberry that balance with white pepper, dried herbs and spice. Aged in both used and new French and American oak for 15 months.
