A traditional method sparkling wine from the Languedoc made with 90% of the ancient variety Mauzac, and the remainder Chenin Blanc and Chardonnay. Soft apple, lemon, and stones on the nose and follow on the palate yielding a approachable sparkler that is dry without being harsh or too tart. Perfect for an aperitif or to pair with light seafood or ceviche.

The pale-colored 2009 Sablé Rosé Nicolas Francois Aubry speaks to delicacy above all else. Orange zest, mint and white pepper lend considerable aromatic lift throughout. Soft, supple and caressing, the 2009 is an excellent choice for drinking now and over the next few years. The Sablé style, in which the first bottling takes place with lower added sugar, and therefore lower pressure, results in understated, soft Champagnes, as is the case here.
